  • Large mixing bowl

  • Whisk

  • Measuring cups and spoons

  • Muffin tin

  • Oven


  • 2 cups rolled oats

  • 1 tsp baking powder

  • 1/2 tsp salt

  • 1 cup Greek yogurt (for protein)

  • 2 eggs

  • 1/4 cup honey or maple syrup

  • 1 tsp vanilla extract

  • 1/2 cup almond milk

  • 1 cup mixed berries or your choice of add-ins (chocolate chips, nuts, etc.)



Preheat your oven to 375°F (190°C).


In a large bowl, mix the rolled oats, baking powder, and salt.


In another bowl, whisk together Greek yogurt, eggs, honey, vanilla extract, and almond milk.


Gently fold the wet ingredients into the dry ingredients.


Add in your choice of berries, nuts or other add-ins.


Spoon the batter into a greased or lined muffin tin.


Bake for 20-25 minutes or until a toothpick comes out clean.


Let them cool for 5-10 minutes before removing from the tin.
