  • 2 ripe avocados, diced

  • 2 cups corn (fresh or frozen will do)

  • 1/2 cup red onion, finely chopped

  • 1/2 cup cilantro, chopped

  • 2 tablespoons olive oil (for grilling shrimp)

  • Juice of 1 lime

  • Salt and pepper to taste
