Equipment

  • A large skillet

  • A pot (for cooking grains)

  • A cutting board

  • A sharp knife

  • Measuring cups and spoons

  • A spatula or large spoon for stirring

Ingredients

  • 1 cup of cooked quinoa or brown rice

  • 1 cup of black beans, cooked or canned

  • 1 avocado, sliced

  • 1 cup of corn kernels

  • 1 cup of chopped bell peppers

  • 1 cup of cherry tomatoes, halved

  • 1 handful of fresh cilantro, chopped

  • 1 lime

  • 1 tablespoon of olive oil

  • Spices: Cumin, paprika, chili powder, salt, and pepper

  • Optional: Cheese, sour cream, or salsa for topping

Instructions

1

Start by cooking your quinoa or brown rice according to the package instructions. For extra flavor, cook them in vegetable broth.

2

While the grains are cooking, chop the bell peppers, tomatoes, and cilantro, and slice the avocado.

3

In a large skillet, heat the olive oil over medium heat. Add the bell peppers and cook for 2-3 minutes.

4

Add the black beans and corn to the skillet, and sprinkle cumin, paprika, chili powder, salt, and pepper. Stir and cook for another 5-7 minutes.

5

Assemble the bowls by dividing the grains, bean mixture, tomatoes, avocado slices, and cilantro among the bowls.

6

Finish with a squeeze of lime juice over each bowl and toppings of your choice.

Notes

Spices: Toast spices in a dry pan for a minute before adding them to the dish to release their flavors. Rice & Quinoa: Cook them in broth instead of water for an extra layer of taste. Avocado: Use ripe avocados for a creamy texture and full flavor. Fresh Ingredients: Opt for fresh cilantro and lime as opposed to dried or bottled versions. Customization: Don’t hesitate to swap ingredients based on personal preference or availability.
