Why Do People Love Cooking This Recipe?

People have a myriad of reasons to adore this recipe. Firstly, it’s a fantastic way to make use of overripe bananas that might otherwise go to waste. Secondly, the inclusion of oats makes it an excellent source of fiber which is beneficial for digestion. For those with a sweet tooth, the chocolate chips bring a guilt-free indulgence as the overall recipe is low in refined sugar. Moreover, this banana bread is versatile; it can be customized with nuts or fruits, and is equally enjoyable with a cup of tea or a glass of milk. Who Can Eat This Recipe?

This recipe is suitable for people of all ages. It’s particularly beneficial for those looking to increase fiber intake, such as individuals with digestive issues. However, those with gluten intolerance should opt for gluten-free oat flour.

Equipment

  • Large mixing bowl

  • Medium mixing bowl

  • 9x5-inch loaf pan

  • Measuring cups and spoons

  • Fork or potato masher

  • Whisk or spoon

  • Toothpick

  • Oven

Ingredients

  • 3 ripe bananas

  • 1 cup oat flour

  • 3/4 cup whole wheat flour

  • 1/3 cup unsweetened applesauce

  • 1/4 cup honey or maple syrup

  • 2 eggs

  • 1/4 cup milk (any type)

  • 1 tsp vanilla extract

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup chocolate chips

  • Optional: nuts, dried fruits

Instructions

1

Preheat your oven to 350°F (175°C).

2

In a large bowl, mash the ripe bananas.

3

Add in the applesauce, honey or maple syrup, eggs, milk, and vanilla extract, and stir until well combined.

4

In another bowl, mix oat flour, whole wheat flour, baking soda, and salt.

5

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

6

Fold in the chocolate chips, and any optional nuts or dried fruits.

7

Pour the batter into a greased 9x5-inch loaf pan.

8

Bake for 50-60 minutes or until a toothpick inserted comes out clean.

9

Allow it to cool before removing from the pan and slicing.

Notes

I cannot stress enough the importance of using ripe bananas - they are sweeter and easier to mash. Opt for oat flour or make your own by blending oats. This adds a depth to the texture. When mixing, avoid over-mixing as it can make the bread dense. Lastly, you can add nuts or dried fruits for an added crunch and flavor.
