  • A colander for draining pasta

  • A large skillet or frying pan

  • A wooden spoon or spatula

  • A knife and chopping board

  • Measuring cups and spoons

Ingredients

  • Whole wheat spaghetti (200g)

  • Fresh mushrooms, sliced (2 cups)

  • Fresh garlic cloves, minced (4-5)

  • Olive oil (2 tbsp)

  • Fresh parsley, chopped (1/4 cup)

  • Grated Parmesan cheese (1/3 cup)(Optionall)

  • Salt and pepper to taste

  • Red pepper flakes (optional)

Instructions

1

Start by boiling a large pot of salted water and cook the spaghetti as per package instructions for al dente. Reserve a cup of pasta water and then drain.

2

Meanwhile, in a large skillet over medium heat, add olive oil.

3

Add garlic and cook for about 1 minute until fragrant but not brown.

4

Toss in mushrooms and cook for 5-7 minutes until they are golden and tender.

5

Add salt, pepper, and red pepper flakes if using.

6

Lower the heat, and add the cooked spaghetti to the skillet.

7

Add a splash of reserved pasta water, parmesan cheese, and parsley. Toss everything together until well combined.

8

Serve immediately with extra cheese and parsley.

Notes

A few chef tips to elevate this dish: First, opt for fresh mushrooms as they have a superior texture and flavor compared to canned ones. Varieties like Cremini or Shiitake are wonderful. Second, do not overcook the garlic; it should be golden, not brown, to prevent bitterness. For the pasta, cook it al dente so it retains some bite. Add a splash of the pasta cooking water to the sauce, this starchy water will help thicken the sauce and make it cling to the spaghetti.
