Ingredients

  • 8 medium flour tortillas

  • 400g shrimps, peeled and deveined

  • 1 cup shredded low-fat cheese

  • 1 bell pepper, thinly sliced

  • ½ onion, thinly sliced

  • 1 avocado, sliced

  • 1 tomato, diced

  • Fresh coriander (cilantro)

  • Lime wedges

  • Olive oil for frying

  • Spices: ground cumin, paprika, salt, pepper

Instructions

Start by heating a large pan over medium heat and adding a little olive oil.

Add the shrimp and cook for 2-3 minutes on each side or until they are pink and opaque. Remove them from the pan and set aside.

In the same pan, add a little more oil if needed, and sauté the bell pepper and onion until they are soft and slightly caramelized.
