  • a mixing bowl

  • a grill

  • a meat thermometer

  • a kitchen knife

Ingredients

  • 4 bone-in chicken breasts

  • 2 tablespoons of allspice

  • 1 tablespoon of thyme

  • 1 teaspoon of cinnamon

  • 1 teaspoon of cayenne pepper

  • 2 teaspoons of salt

  • 1 teaspoon of black pepper

  • 5 cloves of garlic, minced

  • 1 onion, chopped

  • 3 scallions, chopped

  • 2 Scotch bonnet peppers, seeded and chopped

  • 1/4 cup of soy sauce

  • 1 tablespoon of brown sugar

  • Juice of one lime

  • 1/4 cup of vegetable oil

Combine all the spices, salt, black pepper, garlic, onion, scallions, Scotch bonnet peppers, soy sauce, brown sugar, lime juice, and vegetable oil in a food processor or blender. Blend until you have a smooth paste.
