  • 4 medium sweet potatoes

  • 1 tablespoon olive oil

  • 1 red bell pepper, diced

  • 1 zucchini, diced

  • 1 can of black beans, drained and rinsed

  • 1 cup of corn

  • 1 onion, diced

  • 2 cloves of garlic, minced

  • 1 teaspoon cumin

  • 1 teaspoon chili powder

  • 1 teaspoon paprika

  • Salt and pepper to taste

  • Toppings: diced avocado, fresh cilantro, lime wedges, and Greek yogurt (or sour cream)

Preheat your oven to 400°F (200°C). Wash the sweet potatoes and prick all over with a fork, then place on a baking sheet.
