Equipment

  • Large skillet

  • Pot for boiling pasta

  • Strainer

  • Knife and cutting board

  • Stirring spoon

Ingredients

  • 8 oz whole wheat fettuccine

  • 2 boneless, skinless chicken breasts

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1 cup cherry tomatoes, halved

  • 2 cups fresh spinach

  • 1/2 cup low-fat milk

  • 1/2 cup grated Parmesan cheese

  • 1 tsp dried Italian herbs

  • Salt and pepper to taste

Instructions

1

Start by cooking the whole wheat fettuccine according to package instructions. Drain and set aside.

2

Season chicken breasts with salt, pepper, and Italian herbs.

3

In a large skillet, heat olive oil over medium heat. Add the chicken breasts and cook until golden brown and cooked through. Remove from skillet and set aside.

4

In the same skillet, add minced garlic and sauté until fragrant.

5

Add cherry tomatoes to the skillet and cook for 2-3 minutes.

6

Gradually add milk and grated Parmesan cheese, stirring continuously to create a creamy sauce.

7

Slice the cooked chicken and add it to the skillet along with fresh spinach. Cook until spinach wilts.

8

Add cooked fettuccine to the skillet and toss until combined.

9

Serve hot, garnished with additional Parmesan cheese and herbs if desired.

Notes

Paying attention to a few details can elevate your dish to another level. First, opt for whole wheat fettuccine as it is richer in nutrients and fiber. When cooking chicken, ensure that it's cooked through but remains tender. For the sauce, add the garlic to the oil when it’s sizzling but not smoking – this releases maximum flavor without burning. Always add spinach at the end, as it wilts quickly. Lastly, feel free to add a splash of white wine for an extra layer of complexity.
