Equipment

  • a large pot or a Dutch oven

  • a sharp knife

  • a cutting board

  • a stirring spoon

Ingredients

  • 3-4 lbs beef chuck roast

  • Salt and pepper, to taste

  • 2 tablespoons olive oil

  • 1 large onion, chopped

  • 4 cloves of garlic, minced

  • 4 carrots, peeled and cut into large chunks

  • 4 stalks of celery, cut into large chunks

  • 4-5 small potatoes, quartered

  • 4 cups beef broth

  • 1 tablespoon Worcestershire sauce

  • Fresh herbs like rosemary and thyme

Instructions

1

Season the roast with salt and pepper.

2

Heat olive oil in a large pot or Dutch oven. Add the roast and sear on all sides until browned. Remove the roast from the pot.

3

In the same pot, add the onions and garlic and sauté until softened.

4

Return the roast to the pot, add the remaining vegetables, broth, Worcestershire sauce, and herbs.

5

Cover and simmer on low heat for about 3-4 hours, until the meat is tender.

6

Remove from heat, let the roast rest for a few minutes before slicing.

Notes

A few tips to ensure your pot roast is top notch: Season your meat generously. Salt and pepper are the key to unlocking the full flavor of the beef. Searing the roast before slow-cooking locks in the juices and adds a depth of flavor that's truly irresistible. Don't skimp on the vegetables either—they provide an aromatic base that complements the beef perfectly. Finally, let your roast rest before cutting into it. This allows the juices to redistribute throughout the meat, making it incredibly tender and flavorful.
