Equipment

  • A large pot for boiling pasta

  • A colander for draining pasta

  • A large skillet or frying pan

  • A sharp knife

  • A cutting board

  • A mixingbowl

  • A whisk

  • A wooden spoon or tongs

Ingredients

  • 8 oz whole wheat spaghetti

  • 2 boneless, skinless chicken breasts

  • 2 large eggs

  • 1 cup grated Parmesan cheese

  • 4 garlic cloves, minced

  • 4 oz turkey bacon, chopped

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • Chopped parsley for garnish

  • Optional: red pepper flakes

Instructions

1

Cook the whole wheat spaghetti according to the package instructions. Drain and set aside.

2

While the pasta is cooking, season the chicken breasts with salt and pepper, and cook them in a large skillet with olive oil over medium heat until they’re golden and cooked through. Remove and slice them.

3

In the same skillet, add the turkey bacon and cook until crispy. Add the garlic and cook for another minute.

4

In a separate bowl, whisk together the eggs and Parmesan cheese.

5

Remove the skillet from the heat, and quickly toss in the pasta. Gradually add the egg mixture, stirring constantly until a creamy sauce forms.

6

Add the chicken back to the skillet, toss to combine.

7

Garnish with parsley, and optionally, red pepper flakes.

Notes

A key to mastering Chicken Carbonara is to avoid scrambling the eggs. To achieve the creamy sauce, whisk the eggs and Parmesan together, then slowly add them to the pasta off the heat. Also, use whole wheat pasta for added nutrition. Opt for turkey bacon as a healthier alternative to traditional bacon. Saute the garlic just until it's fragrant to avoid bitterness. Lastly, be generous with the black pepper; it’s a signature flavor in Carbonara.
