Why People Love Cooking This Recipe?

Broccoli Cheddar Soup has always been a crowd-pleaser due to its creamy texture and rich taste. But why is it so beloved? Firstly, it’s incredibly versatile. One can tailor the ingredients to fit various dietary preferences, such as gluten-free or vegetarian. Moreover, it’s a great way to incorporate greens like broccoli which are packed with nutrients. Lastly, the feeling of warmth and comfort that one gets from a bowl of this soup is unparalleled, making it a favorite comfort food for many.

Why This Recipe Is Healthy?

This version of Broccoli Cheddar Soup is especially healthy due to several reasons. Broccoli is a powerhouse of nutrients including vitamins C, K, and folate. Equipment

  • A large pot

  • A wooden spoon or spatula

  • An immersion blender or regular blender

  • A knife and cutting board

  • Measuring cups and spoons

Ingredients

  • 4 cups of broccoli florets

  • 2 cups of shredded sharp cheddar cheese

  • 1 cup of diced carrots

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 4 cups low-sodium vegetable broth

  • 1 cup of unsweetened almond milk

  • 2 tablespoons olive oil

  • Salt and pepper to taste

  • A pinch of nutmeg

  • Fresh parsley for garnish

Instructions

1

Heat the olive oil in a large pot over medium heat. Add the onions and garlic, and sauté until golden.

2

Add the broccoli, carrots, and vegetable broth. Bring it to a boil, then reduce heat and let it simmer until vegetables are tender (about 20 minutes).

3

Use an immersion blender to puree the soup until smooth. Alternatively, you can use a regular blender, in batches if necessary.

4

Add the almond milk, cheese, salt, pepper, and nutmeg. Stir well until the cheese is melted and everything is combined.

5

Garnish with fresh parsley. Serve hot with some crusty bread or a side salad.

Notes

Always use fresh broccoli for maximum flavor. Sauté the onions and garlic in olive oil until they are caramelized, as this will create a depth of flavor. Opt for sharp cheddar as it adds more taste without requiring a large amount. A splash of almond milk will give the creaminess you crave without the added calories. A pinch of nutmeg adds a wonderful layer of warmth. Lastly, don’t forget to garnish with fresh parsley, which will add a burst of freshness and color.
