Equipment

  • Large mixing bowl

  • Sharp knife

  • Cutting board

  • Skewers (wooden or metal)

  • Grill or grilling pan

  • Tongs

Ingredients

  • Boneless chicken breast (600 grams)

  • Greek yogurt (1 cup)

  • Garlic cloves (4, minced)

  • Tomato paste (2 tablespoons)

  • Lemon juice (2 tablespoons)

  • Olive oil (2 tablespoons)

  • Ground paprika (1 teaspoon)

  • Ground coriander (1 teaspoon)

  • Ground turmeric (½ teaspoon)

  • Salt (1 teaspoon)

  • Black pepper (½ teaspoon)

  • Wooden or metal skewers

Instructions

1

Start by cutting the chicken into bite-sized cubes.

2

In a large mixing bowl, combine the Greek yogurt, minced garlic, tomato paste, lemon juice, olive oil, and spices.

3

Add the chicken to the marinade, ensuring it's well coated. Cover and refrigerate for at least 2 hours.

4

If using wooden skewers, soak them in water.

5

Preheat your grill to medium-high heat.

6

Thread the chicken onto skewers, leaving space between pieces for even cooking.

7

Place skewers on the grill. Cook for about 10-12 minutes, turning occasionally, until the chicken is cooked through and has a nice char.

8

Serve hot with your choice of sides.

Notes

Proper marination is key. Ensure your chicken is marinated for at least 2 hours, or overnight if possible, to allow the flavors to fully penetrate the meat. Greek yogurt is ideal for tenderizing the chicken, but if unavailable, any unflavored yogurt will do. If you are using wooden skewers, soak them in water for at least 30 minutes before threading the chicken to prevent burning. Lastly, ensure your grill is hot before placing the skewers on it, this helps in achieving those characteristic charred edges.
